NOURISH Buckwheat Pancakes

Ingredients:
- (Makes 8 pancakes)
- 1 cup organic buckwheat flour
- 1/3 cup organic chickpea flour
- 2 tablespoons of NOURISH Essential Daily Superpowder
- 2 teaspoons coconut yoghurt
- 2 organic bananas, thinly sliced
- 1 + 1/2 cups water
- Vegan butter
- Pinch salt
- Bananas, blueberries, natural peanut butter, rice malt syrup, vegan chocolate + coconut yoghurt (to serve)
Method:
In a mixing bowl, combine buckwheat flour, chickpea flour and NOURISH Essential Daily Superpowder / add coconut yoghurt and a pinch of salt / add half the water and mix with a fork / stir through the remaining water and set aside mixture / heat a non-stick pan and add a little butter / pour in pancake mixture to make a circle / add banana slices evenly on top of the pancake / flip when air bubbles start to appear / once cooked, remove pancake from the heat and repeat the process
To serve, layer the pancakes banana side up and top with a little rice malt syrup, peanut butter, blueberries and banana. Finish with a dollop of coconut yoghurt and shaved chocolate.
